Smoky Chipotle Jackfruit & Avocado Burgers on Ezekiel 4:9 Sprouted Whole Grain Burger Buns

Ingredients 

For the jackfruit:

  • 2 cans (14 oz each) young green jackfruit in brine or water, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 chipotle pepper in adobo sauce, minced (plus 1–2 tsp of the adobo sauce)
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground cumin
  • 1 tbsp tomato paste
  • 1/4 cup veggie broth
  • Salt to taste

For serving:

  • 1 ripe avocado, sliced
  • Sliced red cabbage
  • Vegan mayo
  • 4 Food For Life Ezekiel 4:9 Sprouted Whole Grain Burger Buns, toasted
Directions 
  1. Rinse and drain the jackfruit. Shred with your hands or forks, discarding any tough pieces or seeds.
  2. Heat olive oil in a skillet over medium heat. Add onion and sauté for 3–4 minutes, then add garlic and cook another minute.
  3. Add shredded jackfruit, chipotle pepper, adobo sauce, tomato paste, smoked paprika, and cumin. Stir to coat. Add broth and simmer for 10–15 minutes, until jackfruit is soft and flavorful. Season with salt to taste.
  4. Toast Ezekiel 4:9 Burger Buns. Spread vegan mayo on the bottom bun, add avocado slices, then a generous scoop of the chipotle jackfruit and red cabbage and the top bun. Enjoy!
