Penne Pasta Pronto!

1/4 cup olive oil
1/4 cup chopped garlic
1-2 cups diced tomatoes
1/2 cup Ezekiel Penne pasta
Put Olive oil in a pan (cast iron works best)
Press pasta down with a fork and cover with well fitting lid
Cook on med/low for about 15 minutes
Use a thick pasta sauce.
Add fresh basil, goat cheese and cover for a few more minutes.
