Medi's Vegan Sandwich

Ingredients 
  • 2 slices Genesis 1:29® Sprouted Whole Grain and Seed Bread, toasted
  • Vegenaise (vegan mayonaise)
  • thinly sliced tomato
  • thinly sliced red onion
  • fresh baby arugula or spring mix baby lettuce
  • fresh thai basil (optional)
  • salt & freshly ground pepper (optional)
Directions 
  1. Toast the two slices of Genesis 1:29 bread and spread each slice with Vegenaise.
  2. On one of the slices of bread, layer ingredients in this order: tomato, salt & pepper, onion, lettuce, and thai basil.
  3. Cover with remaining slice of toasted bread that has been spread with Veganaise.
  4. Cut in half and serve immediately, otherwise it will start to get soggy and drippy from the tomato.
