Waffle Powerhouse

Ingredients 
  • 2 Ezekial Waffles of choice (or sub with a Food for Life bread or Tortilla)
  • 1 oz shredded low-fat mozzarella (or vegan cheese as desired)
  • 1/2 Avocado
  • Tomato, peppers, and onion slices
Directions 
  1. Smash Avocado with garlic powder and spread on one side of each waffle. (resembling guacamole)
  2. Place onion, pepper and tomato slices on as desired. Sprinkle top with cheese.
  3. Place each open-faced waffle in oven on low-broil for ~3-4 minutes, until cheese is bubbling.
