Pumpkin Truffle Energy Bites

Ingredients 
  • 2 1/2 cups Ezekiel 4:9 Crunchy Sprouted Whole Grain Cereal
  • 3 tbs Almond flour
  • 1 cup raw pecans
  • 1 cup organic canned pumpkin puree (unsweetened)
  • ½ cup Medjool dates
  • ½ cup nut butter of choice (we used almond butter)
  • 1 tbs maple syrup
  • 2 tbs + 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 tsp coconut sugar
  • ½ tsp sea salt
  • 1 cup dairy free dark chocolate
Directions 

Using a food processor, add 1 cup of raw pecans and ½ cup Medjool dates, and pulse.

Add 2 cups of Ezekiel 4:9 Crunchy Sprouted Whole Grain Cereal, 3 tbs almond flour, ½ tsp sea salt, ½ cup almond butter, 1 cup pumpkin puree, 1 tbs maple syrup, 1 tsp maple syrup, and 2 tbs pumpkin pie spice. Pulse to combine.

Scoop into balls on a parchment paper-lined baking sheet and let set in the fridge or freezer until firm, about 30 minutes.

Once truffle energy bites are firm, use hands to roll into balls. Once formed, set back in the fridge to chill while you melt the dark chocolate.

Using a double boiler or microwave, melt 1 cup dairy-free dark chocolate and drizzle or dunk the truffles.
Using a food processor, add ½ cup Ezekiel 4:9 Crunchy Sprouted Whole Grain Cereal, 2 tsp pumpkin pie spice, and 1 tsp coconut sugar and pulse until a fine crumb.

Remove pumpkin truffle energy bites from the fridge. Sprinkle with pumpkin pie spiced cereal dust. Enjoy!
