No-Bake Cocoa Date Bites
- 2 cups packed moist dried dates, pitted and chopped
- 1½ cups Food For Life® Flax and Chia Sprouted Flake Cereal
- ½ cup unsweetened shredded coconut, plus more for rolling if desired
- ¼ cup unsweetened cocoa powder
- ½ teaspoon fine sea salt
- In a food processor combine dates, cereal, coconut, cocoa powder, and salt and pulse until finely ground and combined. Divide mixture into 18 pieces and roll into balls. If desired, roll in additional shredded coconut. Store in an airtight container at room temperature up to 6 weeks.
