Lentil Walnut Tacos with Avocado Cilantro Cream

Ingredients 

Food for Life Sprouted Corn Tortilla

For Taco "Meat":
1 cup cooked lentils
1 cup toasted walnuts
1 tbs olive oil
1/2 onion
1 1/2 tsp smoked paprika
1 tsp cumin
1 tbs tomato paste

For Avocado Cilantro Cream:
1 large avocado
1/4 cup cilantro
2 cloves garlic
1/3 cup vegan sour cream (we recommend Good Karma)
1 tsp lime juice
1 tsp olive oil

Other toppings:
Lettuce
Tomato
Avocado
Chopped onions
Cilantro (for garnish)

Directions 

For Taco “Meat”

  1. Add cooked lentils and toasted walnuts into food processor
  2. pulse until mixture resembles ground beef
  3. Add olive oil to skillet
  4. Place onions in skillet and sauté
  5. Season onions with smoked paprika, cumin and tomato paste
  6. Add lentil/walnut mixture
  7. Stir with spatula until all ingredients are well-incorporated
  8. Cook for two minutes

For Avocado Cilantro Cream:

  1. Put all of the ingredients in the food processor
  2. Combine until smooth

Assemble and enjoy!
