Caramelized Banana and Pineapple Dessert Wraps
- 1 tablespoon coconut oil
- 1 tablespoon brown sugar
- 2 large bananas, halved widthwise, then lengthwise into 4 pieces
- 1 cup pineapple chunks
- 1 cup unsweetened plain vegan yogurt
- 4 Food For Life® Taco-Size Whole Grain Tortillas
- ½ cup chopped toasted cashews
- In a medium skillet melt oil over medium heat. Add sugar and stir until melted and bubbly. Add banana and pineapple, and cook, stirring occasionally, until caramelized.
- Spread yogurt on tortillas, top with fruit and cashews, and roll up.
