Baked Taquitos

  1. Pulse Cauliflower and black beans in food processor 10x
  2. Fry onion in pan
  3. Add corn to pan
  4. Add spices
  5. Warm each tortilla 15 sec in microwave (1 at a time)
  6. Fill tortilla with mixture
  7. Roll tight
  8. Bake: 325 - 20 min
  9. Serve with condiments: Sour cream (or Greek yogurt), Salsa, Avocado
